Scilly Spirit Distillery recommend a large measure of Island Gin over ice, garnished with a fresh kaffir lime leaf and a dried orange slice, with two measures of tonic. Their carefully chosen, and ethically sourced botanicals are steeped for 48 hours. This allows all the flavours and oils to infuse the spirit. Once the gin has been created, they leave it to rest for at least two weeks to enable the flavours to mould and marry together, to create a smooth rounded spirit.
The palate is descriped as full and rounded in the mouth, with soft citrus and juniper on the fore, followed by layers of fennel, a fruity peppery note and subtle spice. The savoury tones of the pepper and cardamom are balanced by a touch of sweetness from the orange and fennel.
The finish concludes with a Balance of spice notes from pepper and cardamom with warm sweet notes from the cassia. Kaffir lime delivers the subtle citrus notes on the finish, encouraging another sip!
